Ingredients

  • 1 cup Full Fat Greek Yogurt
  • ½ cup Grated Cucumber
  • 2 Tablespoons fresh Mint, chopped
  • 1 Tablespoon fresh Dill, chopped
  • 1 Garlic Clove, microplaned
  • 1 Tablespoon Lemon Juice, plus more to taste
  • 1 - 2 Tablespoons Extra Virgin Olive Oil Kosher Salt, to taste

Instructions

  • Add your yogurt to a medium mixing bowl.
  • Grate a cucumber on the large holed side of a box grater (it’s everyone’s favorite, you know what we’re talking about). Then, pat it dry to get rid of excess moisture, smushing it between a paper towel. Add it to your yogurt.
  • Next, add olive oil, a dash of lemon juice (you can always add more to taste), and a pinch of salt to the bowl.
  • Do a fine chop on your herbs and add them to the bowl. Stir everything altogether and give it a taste. Does it need more lemon juice? Salt? Herbage? Do what you need to do to make this sing.
  • Serve it with fresh crudite, over a salad, with some kebabs or even with french fries. This dip is versatile.
